Sugar-free chai works, and the sweetener you pick is what decides whether it tastes right. A monk fruit and allulose blend gets closest, at roughly 1 tsp per cup: allulose carries the body that sugar gives chai, monk fruit carries the sweetness. Jaggery isn't a swap. Its glycemic index is about 84, higher than white sugar's 65.
How much sugar is actually in your daily chai?
Two cups of chai with 2 teaspoons of sugar each is roughly 16 to 24 g of added sugar a day, depending on how heaped the spoon is. ICMR-NIN's Dietary Guidelines for Indians, 2024 put the adult ceiling at 20 to 25 g. Chai alone can spend the whole day's allowance.
A level teaspoon of sugar weighs about 4 g. Almost nobody levels it, so 6 g is closer to what goes into a real cup.
The ICMR-NIN guidelines put added sugar at under 5% of total energy, and state 20 to 25 g a day for an adult. The WHO's 2015 guideline is looser: under 10% of energy, with a conditional under 5%, about 25 g, for additional benefit.

Why does chai taste flat when you take the sugar out?
Sugar does four jobs in chai, and sweetness is only one of them. It adds viscosity, so the cup feels round instead of watery. It blunts the tannins in strong CTC tea and the heat of raw ginger. And it lifts the volatile compounds in cardamom, so the chai smells like more than boiled milk.
Pull the sugar and all four go at once. That's why plain unsweetened chai reads as harsh rather than merely less sweet.
- Sweetness. The obvious one, and the easiest to replace.
- Body. Sugar is bulk. It thickens the liquid and coats the mouth.
- Balance. It softens tannin bitterness and the bite of ginger and clove.
- Aroma. Sweetness raises the perceived intensity of the spice.
Any high-intensity sweetener replaces the first one. Almost none of them replace the second. That gap is the whole reason sugar-free chai has a reputation for tasting thin, and it's the reason allulose matters here more than it does in most applications. Which sweetener works best in chai?
A monk fruit and allulose blend works best in chai, because it covers sweetness and body at the same time. Allulose alone is the closest single ingredient. Monk fruit alone sweetens cleanly but leaves the cup thin. Stevia is the weakest fit, because its bitterness reads more clearly against tannin and spice.
Before the verdicts, the honest bit about where they come from. This was a kitchen test, not a panel: same masala chai base, same tea, same milk, one variable changed at a time, tasted hot by whoever happened to be in the room.

Stevia in chai
Roughly a pinch to 1/8 tsp of stevia powder per cup, since steviol glycosides run 200 to 300 times sweeter than sugar.
Stevia sweetens chai perfectly well. The problem is what else it does. Hellfritsch and colleagues showed in the Journal of Agricultural and Food Chemistry in 2012 that steviol glycosides activate two human bitter receptors, hTAS2R4 and hTAS2R14, which is where the lingering bitter and liquorice finish comes from.
Chai already carries tannin bitterness. Stack a bitter finish on top and the cup gets muddled, especially in a heavily spiced masala chai. It also does nothing for body.
Verdict: usable if you're already used to it. Better in a lighter, less spiced chai than in masala chai. More on where monk fruit and stevia actually differ.
Monk fruit in chai
Roughly 1/4 tsp of monk fruit powder per cup, though this varies enormously by pack, because "monk fruit sweetener" covers everything from pure extract to a spoon-for-spoon blend.
Monk fruit is a good fit for chai. The sweetness lands clean, it dissolves without fuss, and the mogrosides hold up fine at chai temperatures. It doesn't fight the cardamom the way stevia does.

Why does allulose work better in chai than the other options?
Allulose is a bulk sweetener rather than a high-intensity one, so it replaces sugar's volume as well as its sweetness. That means viscosity, mouthfeel and the balancing effect against tannin, which is the half of sugar's job that stevia and monk fruit leave uncovered. It has a glycemic index of zero.
Allulose in chai
Roughly 1.5 tsp per cup, because allulose is about 70% as sweet as sugar.
Allulose is the closest single ingredient to sugar in a cup of chai. It's a bulk sweetener, so it brings viscosity with it. It dissolves fast, it has no cooling effect and no chemical finish, and it does the balancing work against tannin that sugar was doing.
The catch is that you need more of it by volume. Given that allulose is close to zero calories and has no meaningful effect on blood glucose, the extra spoon is a non-issue.

Is jaggery a safe swap in chai if you're watching blood sugar?
No. Jaggery's glycemic index is about 84, higher than white sugar's 65 (Veerbhan and Malik, 2025). The trace iron and minerals in it are real, but they arrive attached to almost as much sucrose as the white stuff. In a cup of chai, jaggery raises blood glucose the way sugar does.
Gud ki chai tastes wonderful. That part isn't in dispute, and anyone telling you it doesn't is selling something.
What's in dispute is the health claim wrapped around it. Jaggery is less refined sugar. Less refined is not the same as lower impact, and the glycemic index numbers say it's slightly worse, not better.

How much sweetener replaces the sugar in one cup?
For a cup that normally takes 2 tsp of sugar: about 1 tsp of a monk fruit and allulose blend to start, about 3 tsp of allulose alone, about 1/4 to 1/2 tsp of monk fruit powder, or a pinch of stevia. Add less than you think, taste, then add more.

Two caveats on that table, both worth reading before you ruin a cup.
Monk fruit packs are wildly inconsistent. A pure mogroside V extract is 200 to 250 times sweeter than sugar. A pack sold as a spoon-for-spoon replacement is mostly bulking agent. Same words on the front, a 100-fold difference in how much you use, so the pack's own spoon guidance beats any chart including this one.
And a blend is sold as a 1:1 swap for sugar by volume, which makes 2 tsp the full-sugar equivalent for a standard cup. Start at 1 tsp anyway. Chai is easy to over-sweeten and impossible to un-sweeten.
Is chai made with milk actually sugar-free?
No, and no sweetener changes that. Milk contains lactose. A tetrapak of toned milk declares roughly 4.5 to 5 g of carbohydrate per 100 ml, and in milk that carbohydrate is sugar. A cup of chai with 60 ml of milk carries about 3 g of sugar before you sweeten anything.
This matters for two reasons, and both of them cut against the phrase "sugar-free chai" that this article is filed under.
The first is legal. Under FSSAI's Advertising and Claims Regulations, 2018, a "sugar-free" claim requires no more than 0.5 g of sugars per 100 g or 100 ml, and a milk chai is nowhere near that.
So the phrase people type, "sugar free chai", describes something the law would call chai with no added sugar. Different claim, weaker one. Here's where FSSAI draws the line between sugar-free and no added sugar.
The second is practical. That 3 g of lactose arrives with protein and fat, which slow it down, and lactose has a lower glycemic index than sucrose. For most people it's a rounding error against the 16 to 24 g they were adding by spoon.
If you're counting every gram, black chai or kahwa removes it entirely. For everyone else, the milk was never the problem.
How do you make sugar-free chai that doesn't taste thin?
Boil the spices before the tea, keep the tea steep short so tannins don't build, use full-fat milk for body, and add the sweetener in the last minute rather than at the start of the boil. Three recipes below, each scaled for two cups.
Classic cutting chai, no sugar
Serves 2. Takes 8 minutes.
- 400 ml water
- 100 ml full-fat milk
- 2 tsp CTC tea leaves
- 2 tsp Super Sweetener, or 3 tsp allulose
- 3 green cardamom pods, lightly crushed
- 1/2 inch ginger, grated
Boil the water with the ginger and cardamom. Add the tea and simmer for 2 minutes, no longer. Add the milk and bring it back to a gentle boil. Take it off the heat, stir in the sweetener, strain and drink.
Masala chai, no sugar
Serves 2. Takes 12 minutes.
- 350 ml water
- 150 ml full-fat milk
- 2 tsp Assam tea leaves
- 2 tsp Super Sweetener, or another monk fruit and allulose blend
- 3 cardamom pods
- 1/2 inch ginger
- 1 small cinnamon stick
- 2 cloves
- 1/4 tsp cracked black pepper
Crush the whole spices lightly. Boil them in the water for 3 minutes to get the oils out.
Add the tea and simmer 2 minutes. Add the milk and simmer 2 more. Off the heat, stir in the sweetener, strain and serve.
Kashmiri kahwa, no sugar
Serves 2. Takes 10 minutes. No milk, so this one genuinely is sugar-free.
- 500 ml water
- 1 tsp Kashmiri green tea or a kahwa blend
- 2 tsp Super Sweetener, or another monk fruit and allulose blend
- 4 cardamom pods
- 1 small cinnamon stick
- 4 to 5 saffron strands
- 1 tsp crushed almonds
Boil the water with the spices and saffron. Add the tea, drop the heat and steep for 4 minutes. Stir in the sweetener, strain into cups and top with the almonds.
What usually goes wrong with sugar-free chai?
Four things, in order of how often they happen: the sweetener goes in at the start of a long boil, the tea over-steeps and turns bitter with nothing to soften it, the milk is toned instead of full-fat, and the pack turns out to be mostly erythritol or maltodextrin rather than what's on the front.
Sweetener in too early. Allulose is a reducing sugar and browns more readily than sucrose, so a long rolling boil can dull the sweetness and darken the cup. Add it in the last minute, off the heat.
Over-steeping. Every extra minute pulls more tannin. With sugar you could boil chai half to death and cover it up. Without sugar you can't, so keep the tea in for 2 minutes and no more.
Thin milk. Fat carries body, and body is exactly what you lost when the sugar came out. Full-fat milk gets some of it back for free.
The wrong pack. Turn it over and read the ingredients list in order. A sweetener sold as monk fruit is often erythritol first and monk fruit last, and the order of declaration tells you which one you're actually buying.
One more, less common: under-spicing. Cardamom, ginger and clove carry a lot of the perceived richness of chai. Being generous with them reduces how much sweetness you need in the first place.
